Marinate the beef: Combine sliced beef with soy sauce, cornstarch, and oil in a bowl. Mix well and let it sit for at least 15 minutes while you prep everything else.
Prepare the sauce: Whisk together soy sauce, oyster sauce, brown sugar, sesame oil, beef broth, and cornstarch in a small bowl. Set aside.
Cook the noodles: Boil your noodles according to package directions, drain, and set aside. A little tip – toss them with a tiny bit of oil to prevent sticking.
Blanch the broccoli: Drop broccoli florets into boiling water for 2 minutes, then immediately transfer to ice water. This keeps them bright green and perfectly crisp-tender.
Sear the beef: Heat 2 tablespoons of oil in a large wok or skillet over high heat. Add the marinated beef in a single layer and cook for 2-3 minutes without stirring to get a nice sear. Flip and cook another minute. Remove and set aside.
Cook aromatics: Add remaining oil to the pan. Toss in ginger and garlic, stirring for about 30 seconds until fragrant. Add onions if using and cook for another minute.
Combine everything: Return the beef to the pan along with the broccoli. Pour in the sauce and stir everything together. Let it simmer for 2-3 minutes until the sauce thickens.
Add the noodles: Toss in your cooked noodles and mix everything together until the noodles are well coated with sauce.
Serve immediately: Garnish with sesame seeds and green onions. Enjoy while hot!
