  • 6 cups fresh watermelon cut into bite-sized cubes
  • ¼ cup balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • ½ cup crumbled feta cheese
  • ¼ cup fresh mint leaves torn or chopped
  • ¼ cup fresh basil leaves torn
  • ¼ red onion thinly sliced
  • Salt and black pepper to taste
  • Optional: 1 tablespoon honey if you prefer a sweeter dressing

Instructions
 

  • Prepare the watermelon: Cut your watermelon into bite-sized cubes, removing all seeds. Make sure the pieces are roughly the same size so they look nice and are easy to eat. Pat them dry with paper towels to remove excess moisture.
  • Make the dressing: In a small bowl, whisk together the balsamic vinegar and olive oil. If you're using honey, add it now and whisk until everything is well combined. Season with a pinch of salt and pepper.
  • Assemble the salad: Place the watermelon cubes in a large serving bowl. Add the sliced red onion, making sure to separate the rings so they distribute evenly throughout the salad.
  • Add the cheese and herbs: Sprinkle the crumbled feta cheese over the watermelon. Tear the fresh mint and basil leaves and scatter them on top. The herbs should be added just before serving to keep them fresh and vibrant.
  • Dress and toss: Drizzle the balsamic dressing over the entire salad. Gently toss everything together using a large spoon or your hands. Be careful not to mash the watermelon pieces.
  • Chill and serve: Let the salad sit in the refrigerator for about 15-20 minutes before serving. This allows the flavors to meld together beautifully. Give it one final gentle toss before bringing it to the table.
